Don’t let being stuck at home stop you from your brunch needs. Brunch is a very important food group to us New Yorkers and we just won’t give it up. I hosted a stay at home brunch for my family with all of our favorites and it was eggcellent.
From our local bagel store we ordered two dozen assorted bagel flavors. From Costco, you can purchase a ton of lox for $17.00 and it is delicious. We love to spread a bagel with cream cheese, add the lox and top it with tomatoes, onions and capers. Trust me, its everything.
We also had a fruit spread, deviled eggs, banana bread and of course my famous Bloody Mary bar.
This time for my Bloody Mary bar, we had mini peppers that we cut the bottoms of and hung them over the glass, lemons and lime (one of each in your drink makes a difference, small sweet pickles (cuts the spice), celery, red chili flakes and of course bacon. I mixed this in with some Tito’s vodka and our favorite Bloody Mary mix. You can make your own Bloody Mary Mix but this is honestly easier and cheaper. We like the 5 Pepper mix because its spicy and we like our Mary’s with extra heat.
This easy creamy bolognese uses minimal ingredients and slow cooks for 3 hours in a sauce pan or spaghetti pot. It is perfect for that Sunday gravy your family is craving. Pour on top of homemade gnocchi or your favorite linguini. Although this recipe is for two people, feel free to double the recipe for more hungry mouths.
Ingredients:
1 lb ground beef
Diced 1 large onion, celery and carrots
3 garlic cloves minced
28 oz can of crushed tomatoes
14 oz can of Huntz sauce
Salt and pepepr
2 teaspoons of sugar
Fresh chopped thyme, rosemary and basil
Heavy cream (optional)
In a large spaghetti pot, deep sauce pan or Dutch oven – heat olive oil and garlic until fragrant.
Add vegetables 4 minutes
Add ground beef
Once beef is browned add crushed tomatoes and sauce
Add Salt, pepper and herbs
Slow cook on low covered for 3 hours
Your last step, after your sauce has cooked for 3 hours add a splash of heavy cream bring to a boil and simmer for 2 minutes for that creamy taste. ** Dairy free? Add a splash of pure coconut milk from a can.
Voila enjoy your easy Sunday gravy.
